HOW TO MAKE MISO HUMMUS WITH CRISPY ONION FURIKAKE

 MISO HUMMUS WITH CRISPY ONION FURIKAKE




MATERIAL:

• 1/2 cup dried chickpeas
• 1 teaspoon of yeast, divided
• 2 cloves garlic, peeled.
• 2 tablespoons plus 2 teaspoons fresh lemon juice, or to taste
• 1/3 cup Chinese sesame paste
• 1/4 – 1/3 cup Shiro (white miso)
• 2 tablespoons ice cold water
• 1/8 teaspoon cumin
Olive oil or toasted sesame oil (staff)
• Crispy onion forikaki, to serve (optional)


This special and super smooth hummus seasoned with one of my favorite ingredients miso, and white. And gives very rich miso front chickpeas umami that corresponds with lemon. I swapped paste tahina "Sesame" traditional, which adds more depth of flavor due to the fact that the roasted sesame paste United Nations and Sesame toast. The result of Homs Super nutty, but thin, just dreams of Homs.
STEP:
1-1/2 teaspoon of yeast and peas in a medium sized pot and add cold water to cover 2 inches. Cover, and allow to sit at room temperature overnight, until chickpeas have doubled in size. Drain and rinse.
2. In a large saucepan, combine the soaked chickpeas and remaining 1/2 teaspoon of yeast and add cold water to cover by at least 2 inches. Bring to a boil, skimming if necessary. Reduce the heat to medium-low and partially cover, and simmer until the chickpeas are tender and Squish easily between your fingers, about 45-60 minutes. Drain and set aside.
3. During cooking the chickpeas, place the miso and Sesame and lemon juice and garlic in Blender or food processor and pulse until smooth. With motor running, add the ice water, 1 tablespoon at a time (this initially booking) until the mixture becomes smooth and pale and very thick. Add drained chickpeas and cumin and process of scraping down the sides as needed, until very smooth, about 4 minutes. Thin with water if there is a need for a more fluid consistency. Taste and season with lemon juice and cumin, as required. Because the topping with forikaki, resist the urge to season with additional salt or miso.
4. Scoop chickpeas in a bowl and drizzle liberally with toasted sesame "olives or shallow. Top with forikaki spray. Enjoy a lot of things to scoop the Earth, or only with a spoon.


Forikaki crispy onions
• 1 tablespoon white sesame seeds
• 1 tablespoon black sesame seeds
• 2 tablespoons of crispy fried onions or onion
• 2 tbsp bonito flakes
• 1 tablespoon toasted Nori paste
• 1 teaspoon sugar option (use fluffy)
• 1 teaspoon smoked sea salt.

Mix all ingredients together. Use as a finishing salt/seasoning. Sprinkled on hummus or other things that require little gazing.
