HOW TO MAKE SPICY SHRIMP AND ZUCCHINNI NOODLES WITH FENNEL, LEMON AND HERBS







Shrimp and Zucchini noodles with fennel, lemon and herbs
Material:
• 2 tablespoons neutral oil, divided
• 1/2 pounds large shrimp, peeled and deveined if desired
• Fennel bulb, sliced, medium length save fronds
• 2 cloves garlic, sliced thin
• 1/2 teaspoon crushed red pepper flakes, or more to taste
• 1/2 lemon, seeds removed, thinly sliced, divided
• 2 small zoktshinis sberalisid using a smaller blade
• 1/2 cup roughly chopped cilantro
Olive oil, to taste
• Salt and freshly ground pepper, to taste

Step:
1. Heat 1 tablespoon oil in a large pan on high temperature. Add shrimp, being careful not to crowd the Pan, and cook for 1-2 minutes each side, until slightly charred, and pink and cooked through. Season generously with salt and pepper and remove from the Pan and set aside.
2. Reduce heat to medium-high and add the remaining tablespoon of oil. Add the sliced fennel and Cook, stirring occasionally, until golden brown and soft, 10-12 minutes. Add garlic and red pepper flakes, half of the lemon slices. Cook until the garlic becomes soft, about 2 minutes. Add the noodles Zucchini, Season generously with salt and pepper, and Cook, tossing, until tender and cooked, 2-3 minutes, depending on thickness of zoodles.
3. Add the shrimp to the Pan and toss. In a small bowl, toss the fennel fronds, lemon slices and remaining coriander with a drizzle of olive oil. Season with salt and pepper and run on top of the shrimp noodles and zucchini.
