Chicken Fried Steak
Steak
Material:
• 1 steak choice (choose most people don't pound round steak and pound uses Chuck)
• 1/2 teaspoon kosher salt
• 1 teaspoon freshly ground pepper
• 1/2 cup flour
• 1 egg, lightly beaten
• Banfriing oil (if you want to be authentic, and using some of the oil that I had fried chicken at!)
Gravy
Material:
• 2 tablespoons of duck fat
• 2 tablespoons of flour
• 3/4 cup milk
• 1/4 cup chicken broth
• Salt and pepper
Step:
1. Place the flour in a shallow dish and mix with salt and pepper. Put the eggs in another shallow dish. Dredge meat in flour, then eggs, then flower again.
2. In a large skillet, heat about 1/2 cm oil over medium high. Once the
oil starts to shimmer, add the steak and cook until golden and crispy,
about 4-5 minutes per side. Remove from the Pan and set aside while
making the gravy.
3. In a bowl, melt duck fat "sauce on medium heat. Sprinkle with flour and
Cook, stirring until all inclusive. While whisking, slowly pour in the
milk, then the gravy. Bring to a gentle simmer and Cook, whisking occasionally until slightly thickened. Taste and season with salt and pepper.
4. The enjoyment of meat topped with extra pepper sauce if desired.
