HOW TO MAKE LEMONGRASS BEEF SALAD ROLLS
LEMONGRASS BEEF SALAD ROLLS
MATERIAL:
• 4 cloves garlic, minced
• 1-2 stalks Lemongrass, white parts only, chopped (about 2 tablespoons)
• 1 medium shallot, diced
• 1 Thai Red Chili, sliced
• 1 tbsp fish sauce
• 1/2 tbsp oil
• 2 tsp sugar
• Freshly ground pepper, to taste
• Oil pan
Dipping sauce
• 1 clove garlic
• 1 1/2 tablespoons sugar
• Lemon juice 1/4
• 3/4 cup water
• 1 1/2 tablespoons fish sauce
Laps
• 1 package vermicelli
• 12-14 round rice papers
• Lettuce (I use butter got lettuce)
• Choose fresh herbs: cilantro, mint and Basil
STEP:
1. Mix all ingredients in a bowl of beef. Let soak while you make the
dipping sauce. You can also set this in the House and let it soak
overnight, tightly covered.
2. Make fish sauce: crush the cloves of garlic (either using a garlic
press or the back of a spoon) in sugar. Add lemon juice and water. Stir until the sugar dissolves. Add fish sauce, and adjust to taste. Cover and set aside.
3. Bring water to boil the noodles and rice paper. Place the noodles in a
bowl and pour boiling water over them. Cover and let the noodles soften
while you were cooking beef. Pour the remaining hot water in a bowl and
set aside.
4. Heat a cast iron skillet on high temperature. Add a touch of oil to pan. Cook beef until brown and crispy, stirring occasionally, until caramelized and cooked through. Remove from the heat.
5. Drain noodles. Rice paper wrapper and submerge completely in your pot
of boiling water for 10-15 seconds. Put the wrapper on a plate or
cutting board – and they will continue to soften the roll your own
collection. Add a taste of fillings: iceberg lettuce, herbs, noodles,
Lemongrass beef. Fold the bottom half filled barn in place, fold in
sides and roll, much like a burrito. Repeat until all the lists. Enjoy with the dipping sauce!
Notes:
I used the butter got lettuce – that comes before washing them, making
making these lists much easier. We found some Clamshells all herbs
(cilantro, Thai basil, mint) in a regular grocery store. I usually buy
the herbs in bunches, but only a few Clamshells right amount for us.
