HOW TO MAKE GREEN ONION PANCAKES
GREEN ONION PANCAKES
MATERIAL:
Dough
- 1 cup (130 grams) of flour.
- 1 cup (140 grams) bread flour
- 1/2 teaspoon salt
- 1/2 cup (120 grams) of warm/hot water (150 ºF/65 ° c)
- 1/4 cup (60 grams) of cold water temperature-room
- 2 tablespoons of vegetable oil (25 grams)
Oil "green onions"
- Finely sliced 1/2 cup green onions
- 1/4 cup oil
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 1/8 teaspoon baking soda
Fill the
- 1/2 cup finely sliced green onions
STEP:
1. Attitude-mixer dough hook, mix together the flour and salt. With the
machine running, slowly add hot water (almost boiling) in a thin stream.
Mix for one minute and then pouring cold water and knead for 1 minute.
Slowly stream in oil and knead for 5-10 minutes, or until the dough is
shiny and elastic. Dough should pull away cleanly from sides and when
lifting the dough hook, and will make down slowly. Cover the bowl with
plastic wrap and let rest for an hour.

While dough is resting, make green onion oil. Mix the green onions,
oil, salt and white pepper until smooth. Go to a bowl and stir in yeast.
Cover and refrigerate until required.
3. Divide the dough into 4 equal parts on the surface of Earth. Working
with one portion at a time (covering other parts), put the dough until
about 1/8 thick. Thin brush some oil and onion and sprinkle with about 2
tablespoons sliced green onions. The dough in thirds, like a letter, rotate, then fold into thirds again. Cover and let rest while you can repeat with remaining balls of dough.

Once you fill all the dough balls, it's time to ask them. Lightly
Pierce each ball of dough with a fork – this will help you to put the
pancakes. If you don't poke holes in dough, air pockets will try to
force themselves with explosives, so don't skip out on this one.
Carefully roll the dough into a large circle, being sure not to crush a
lot – if you're on a roll, you must Flatten all layers flaky. I managed

5. Heat a skillet over medium-high heat. Add a tablespoon or so of oil
when hot shiny, carefully lift the pancake and stir. Cook on medium high
until golden brown and puffed, flipping once. Remove from pan and slice
and enjoy!
