Mapo Tofu Waffles


Mapo sauce
Material:
• 1/4 cup chicken broth
• 2 tablespoons chili bean paste
• 1 tablespoon soy sauce
• 1/2 pound ground pork
• 3 cloves garlic, minced
• 1 inch piece of ginger, minced
• 1 tablespoon cornstarch dissolved in water 2 tbsp.
• 1 teaspoon of sesame oil.
• 1/2 teaspoon Sichuan pepper powder
• 2 green onions, sliced
Tofu pies
Material:
• 1 block soft or medium tofu, cut in half and then cut lengthwise into 4, so that you have 8 pieces
Step:
1. Stir together broth and bean paste and soy sauce. Set aside.
2. Heat oil in a wok or large skillet over high heat. Add pork and Cook, breaking up into small pieces. When it is no longer pink, add garlic and ginger and cook for 2 minutes more. Add broth mixture and simmer. Stir into corn mixture and bring to a boil, stirring occasionally, until thick and glossy, about 1 minute. Turn off heat, and stir in sesame oil and pepper in Sichuan. Serve over pancakes, tofu and sprinkle with green onions.
3. Preheat your waffle maker. Brush with oil and tofu place waffle maker. Close gently, but do not press down. Tofu heats gently, and would take the form of nonsense. This is done when it is golden and crispy. Enjoy with the pork mapo.
