HOW TO MAKE SMOKED GOUDA POTATO PANCAKES
Crispy smoked quality potato pancakes
Material:
• 1 large 1 lb russet potatoes, peeled
• 1 small onion, peeled
• 1/4 cup flour
• 3/4 cup shredded smoked Canadian quality
• 1 large egg, lightly beaten
• 1 teaspoon salt
• 1/4 teaspoon freshly ground pepper
• Grapeseed Oil, as needed
• Sour cream
• Sliced green onions
Step:
1. Coarsely shred potatoes and onions in a box grater. Move a piece to a
piece of cheese cloth and squeeze as dry as possible. Allow to sit for 2
minutes then dry again.
2. Whisk together flour, salt and pepper. Toss potatoes, onions and cheese
in flour for white light coat and stir until evenly coated.
3. In a large skillet, heat generous amount of oil over medium heat until
hot and shimiri. Drop a spoon potato mixture and flatten. Medium to
medium-high heat, Cook until crisp and Golden on the edges, about 1 1/2 –
2 minutes. Flip and cook the other side until golden, about 1-2
minutes. Drain on a wire rack or paper towels.
Bankaking continues until the end of the potato mixture. Top pancakes
with sour cream, green onions, and shredded more than quality, if
desired.
